Fried rice is a favorite among our 3 children, but as you probably know, it can be loaded with sodium, additives and unhealthy fats. On my quest to find a healthier version, I came across a Paleo Fried Rice Recipe (from Iowa Girl Eats). I was immediately intrigued as we are mostly paleo at our house these days anyway. I adapted the original fried rice recipe to fit our needs and this was the end result for a delicious Paleo Fried Rice Recipe, an instant favorite! Enjoy this Fried Rice recipe with all of the delicious, healthy vegetables without the carbs of rice.
PALEO FRIED RICE RECIPE
Ingredients:
- 1 tablespoon + 1 teaspoon sesame oil
- 1 small head cauliflower
- 1 cup frozen mixed vegetables
- 3 cloves garlic, minced
- salt and pepper
- 3 eggs
- 3 tablespoons Briggs Liquid Aminos
Directions:
- Combine 1 teaspoon sesame oil with eggs in a bowl then whisk to combine and set aside.
- Chop cauliflower head into big chunks, and put through a food processor fitted with the grating attachment, or grate the cauliflower with a box grater.
- Measure out 4 cups grated cauliflower, and save the rest for another use.
- Heat remaining 1 tablespoon sesame oil in a wok or large nonstick skillet over high heat. Add cauliflower and frozen mixed vegetables, then stir fry until cauliflower is just beginning to turn tender, about 3-4 minutes.
- Add garlic, salt and pepper. Continue to stir fry until garlic is fragrant, about 30 seconds.
- Push mixture to the sides of the wok to create an opening in the center. Add the eggs and scramble

- Toss mixture to combine.
- Drizzle with liquid aminos, and mix to combine. Serve hot.
