Fried Rice Recipe

Fried rice is a favorite among our 3 children, but as you probably know, it can be loaded with sodium, additives and unhealthy fats. On my quest to find a healthier version, I came across a Paleo Fried Rice Recipe (from Iowa Girl Eats). I was immediately intrigued as we are mostly paleo at our house these days anyway. I adapted the original fried rice recipe to fit our needs and this was the end result for a delicious Paleo Fried Rice Recipe, an instant favorite! Enjoy this Fried Rice recipe with all of the delicious, healthy vegetables without the carbs of rice.

 

PALEO FRIED RICE RECIPE

Ingredients:

  • 1 tablespoon + 1 teaspoon sesame oil
  • 1 small head cauliflower
  • 1 cup frozen mixed vegetables
  • 3 cloves garlic, minced
  • salt and pepper
  • 3 eggs
  • 3 tablespoons Briggs Liquid Aminos

  Directions:

  1. Combine 1 teaspoon sesame oil with eggs in a bowl then whisk to combine and set aside.
  2. Chop cauliflower head into big chunks, and put through a food processor fitted with the grating attachment, or grate the cauliflower with a box grater.
  3. Measure out 4 cups grated cauliflower, and save the rest for another use.
  4. Heat remaining 1 tablespoon sesame oil in a wok or large nonstick skillet over high heat. Add cauliflower and frozen mixed vegetables, then stir fry until cauliflower is just beginning to turn tender, about 3-4 minutes.

  6. Add garlic, salt and pepper. Continue to stir fry until garlic is fragrant, about 30 seconds.

 

  1. Push mixture to the sides of the wok to create an opening in the center. Add the eggs and scramble

  3. Toss mixture to combine.
  4. Drizzle with liquid aminos, and mix  to combine. Serve hot.
